
Ingredients:
– [ ] 250g cooked skinless chicken breast, roughly chopped
– [ ] 1 roasted red pepper from a jar, drained and sliced into thin strips
– [ ] 1/4 red onion, diced
– [ ] 2 ripe tomatoes – any type as long as they are ripe
– [ ] Handful of basil leaves
– [ ] 200g decent bread, torn into large chunks
– [ ] 1 tbsp olive oil
– [ ] 1 tbsp balsamic vinegar
Other things you can add include sausage chunks, bacon, chorizo, prosciutto and salami, prawns, pickles, sweetcorn, shallots instead of red onion, lettuce, beetroot, and lemon juice.
Equipment:
Large salad bowl
Two large salad spoons
Separate bowl for ingredients to add in after serving (optional)
Plates/Bowls to serve on (and cutlery)
Method:
Chop the tomatoes into thin chunks and place in a large bowl.
Add in all other ingredients apart from basil leaves and chicken breasts.
Toss together in a large bowl and then add olive oil when the ingredients are mixed together.
Serve up a helping onto a plate or bowl; add in the chicken and basil leaves on top (you can also toss them together if you prefer)
Sprinkle with some salt and pepper and enjoy your meal!
